Brine di Trapani I The Art of the Perfect Brine
A beautifully prepared turkey begins the day before it reaches the table. Brine di Trapani is an aromatic brining blend crafted to help create a beautifully seasoned, succulent turkey for your holiday gathering.
Follow the instructions below for preparing your brine, refrigerating your turkey, and roasting it to perfection.
WHAT YOU'LL NEED
1 fresh or fully thawed turkey, 13–20 pounds (allow approximately 1½ pounds per person)
1 package Brine di Trapani (15 oz)
1 brining bag (included in your kit)
2 cups water, for dissolving the brine
1 quart apple juice
½ bottle dry white wine (optional)
Approximately 2 gallons of ice water, plus additional cold water as needed
Anchored Homestead Tartufo™ Italian Summer Truffle Salt, for finishing
A food-safe cooler or bucket with a lid, large enough to hold the turkey and enough liquid to fully submerge it
Choosing Your Container: A 5-gallon bucket may accommodate many smaller turkeys, but a 13–20-pound bird may require a larger container. Choose a vessel that allows the turkey to remain fully submerged while the brining bag is securely supported.
PART I — PREPARE THE BRINE
Step 1 — Dissolve the Blend
The day before roasting, combine the entire package of Brine di Trapani with 2 cups of water in a saucepan. Heat gently, stirring until the salt and sugar dissolve.
Remove from the heat and allow the concentrate to cool completely.
Step 2 — Combine the Ingredients
Place the included brining bag inside your food-safe cooler or bucket, ensuring the container provides sturdy support. Place the turkey inside the bag.
Pour the cooled brine concentrate over the turkey. Add the apple juice and, if desired, the dry white wine.
Step 3 — Add the Ice Water
Add approximately 2 gallons of ice water, followed by additional cold water as needed to fully submerge the turkey.
Securely close the brining bag and cover the container.
Step 4 — Refrigerate
Keep the turkey fully submerged and refrigerated at 40°F or below for 12–24 hours.
If using a cooler, monitor the temperature carefully to ensure the turkey and brine remain at or below 40°F throughout the process. Never leave the turkey brining at room temperature.
PART II — PREPARE FOR ROASTING
Step 1 — Remove and Dry
Remove the turkey from the brining bag and discard the brine. Do not rinse the turkey.
Pat the turkey thoroughly dry inside and out with paper towels. Dry skin helps encourage browning during roasting.
Step 2 — Prepare the Turkey
Gently loosen the skin over the breast and thighs, taking care not to tear it. If desired, spread softened butter beneath the skin and over the exterior.
You may add aromatics such as onion, garlic, celery, carrots, or fresh herbs to the cavity.
Because the turkey has been brined, additional salt may not be necessary.
PART III — ROAST THE TURKEY
Step 1 — Begin at High Heat
Preheat the oven to 500°F.
Place the turkey breast-side up on a roasting rack inside a sturdy roasting pan. Roast for 30 minutes to begin developing golden-brown skin.
Step 2 — Reduce the Temperature
Reduce the oven temperature to 350°F and continue roasting until the turkey reaches a safe internal temperature.
Cooking time will vary according to the turkey's weight, shape, and your oven. Use a reliable food thermometer rather than relying on time or appearance alone.
Step 3 — Check for Doneness
The turkey is ready when it reaches an internal temperature of at least 165°F in all three locations:
The thickest part of the breast
The innermost part of the thigh
The innermost part of the wing
Avoid touching bone with the thermometer probe.
Step 4 — Finish with Tartufo™
Remove the turkey from the oven. Immediately sprinkle Anchored Homestead Tartufo™ Italian Summer Truffle Salt evenly over the hot turkey, following the finishing method used in the Pinch Spice Market recipe.
Because the turkey has already been brined, adjust the amount to taste to avoid oversalting.
Step 5 — Rest Before Carving
Lightly tent the turkey with foil and allow it to rest for 45–60 minutes before carving.
Bring the turkey to the table and enjoy the aromatic depth of Brine di Trapani, finished with the earthy character of Italian summer truffle.
