ABOUT THE RECIPE

Tender pork tenderloin and golden roasted potatoes come together in one pan with the savory depth of Terrane Mushroom & Herb. Finished with a simple honey butter that melts into the warm pan juices, this comforting meal feels equally at home on a weeknight table or at a Sunday gathering.

INGREDIENTS

  • 1 pork tenderloin (about 1–1½ pounds)

  • 3 tablespoons avocado oil, divided

  • 1½ pounds baby potatoes, halved lengthwise

  • 2 tablespoons + 2 teaspoons Terrane Mushroom & Herb Finishing Salt, divided

  • 4 tablespoons unsalted butter (½ stick), softened

  • 1 tablespoon honey

  • Fresh thyme sprigs, for garnish (optional)

PREPARATION

  1. Preheat the oven to 425°F.

  2. Pat the pork tenderloin dry with paper towels. Season generously on all sides with 1 tablespoon Terrane Mushroom & Herb Finishing Salt.

  3. Heat 1 tablespoon avocado oil in a large oven-safe skillet or Everyday Pan over medium-high heat. Once hot, add the pork and sear on all sides until deeply golden brown, about 4–5 minutes total. Remove from the heat.

  4. In a medium bowl, toss the halved potatoes with the remaining 2 tablespoons avocado oil and 1 tablespoon Terrane Mushroom & Herb Finishing Salt until evenly coated.

  5. Arrange the potatoes around the pork in the skillet. Transfer to the oven and roast for 25–30 minutes, or until the pork reaches an internal temperature of 145°F. The potatoes should be tender and deeply golden.

  6. While the pork roasts, prepare the Terrane Honey Butter. In a small bowl, combine the softened butter, honey, and 2 teaspoons Terrane Mushroom & Herb Finishing Salt. Stir until smooth and well blended.

  7. Remove the skillet from the oven and allow the pork to rest for 5–10 minutes before slicing.

  8. Slice the pork and serve alongside the roasted potatoes. Spoon the Terrane Honey Butter over the warm pork and potatoes just before serving, allowing it to melt into the pan juices.

Tips:
  1. Reserve a small spoonful of the Terrane Honey Butter for serving at the table. It's equally delicious spooned over roasted vegetables, grilled steak, or a slice of warm crusty bread.

  2. The Terrane Honey Butter can be prepared up to 3 days in advance and refrigerated until ready to use.


Notes:
  • Pork tenderloin is best cooked to 145°F and allowed to rest before slicing.

  • Yukon Gold potatoes may be substituted for baby potatoes.

  • Leftover pork makes excellent sandwiches the next day.
