ABOUT THE RECIPE

Rich, deeply fudgy brownies layered with silky chocolate ganache and finished with delicate sea salt flakes. A classic chocolate indulgence with a beautifully balanced sweet-and-salty finish.

INGREDIENTS

Brownies
  • ¾ cup all-purpose flour

  • 2 tablespoons unsweetened cocoa powder

  • ¼ teaspoon Trapani™ Fine Sea Salt

  • ¾ cup unsalted butter

  • 5 ounces semisweet chocolate, finely chopped

  • ¾ cup semisweet chocolate chips

  • ¾ cup granulated sugar

  • ¼ cup light brown sugar

  • 3 large eggs

  • 1 teaspoon vanilla extract


Chocolate Ganache
  • 1 cup (6 ounces) semisweet chocolate chips

  • ⅔ cup heavy whipping cream

PREPARATION

1. Prepare the pan

Preheat oven to 350°F. Line an 8×8-inch pan with parchment paper, leaving an overhang on two sides.


2. Prepare the dry ingredients

In a medium bowl, sift together the flour, cocoa powder, and Trapani Fine Sea Salt. Set aside.


3. Make the chocolate base

In a large saucepan over low heat, melt the butter. Add the chopped chocolate and stir constantly until completely smooth. Remove from heat and stir in the granulated and brown sugars until combined. Let the mixture cool for 5–10 minutes.


4. Finish the brownie batter

Once the chocolate mixture has cooled slightly, whisk in the eggs and vanilla until fully incorporated. Add the flour mixture and stir just until combined. Fold in the chocolate chips.


5. Bake

Pour the batter into the prepared pan and smooth the top.

Bake for 20–25 minutes, beginning to check at 20 minutes. For especially fudgy brownies, remove from the oven when the center is still soft and slightly underdone. Do not overbake. Allow the brownies to cool completely.


6. Make the ganache

Place the chocolate chips in a small heatproof bowl. In a small saucepan, bring the heavy cream just to a boil. Pour the hot cream over the chocolate and let stand for 1–2 minutes. Whisk until smooth and glossy. Allow the ganache to cool slightly until thickened but still spreadable.


7. Finish the brownies

Spread the ganache evenly over the cooled brownies. Immediately finish with Salina™ Mediterranean Sea Salt Flakes, scattering the pyramid-shaped flakes lightly over the surface. Allow the ganache to set before cutting.
