ABOUT THE RECIPE

Tips for Best Results

Banana Selection: Use ripe but firm bananas. The sweetness pairs perfectly with Vanilla Sel's floral saltiness without becoming mushy.

Variations: Add a dash of your Quartet peppercorns to the bananas for layered spice, or serve with yogurt seasoned with Strawberry Sugar for fruity contrast.

Storage: Best enjoyed fresh, but leftovers can be refrigerated up to 1 day and reheated gently in a skillet.

INGREDIENTS

  • 2 ripe bananas, peeled and sliced lengthwise into halves

  • 4 slices thick artisan bread (e.g., sourdough or brioche), toasted

  • 2 Tbsp unsalted butter (divided)

  • 1–1½ tsp Vanilla Sel (divided)

  • 2 Tbsp honey or maple syrup

  • Optional toppings: sliced almonds, fresh berries, or a dollop of Greek yogurt

PREPARATION

Prepare the Toast:

Toast the bread slices until golden and crisp (use a toaster or oven at 350°F/177°C for 3–4 minutes). Spread a thin layer of butter (about ½ Tbsp per slice) on each while still hot—the butter melts and absorbs into the bread.

Caramelize the Bananas:

Heat a non-stick skillet over medium heat. Add the remaining 1 Tbsp butter and let it melt until foaming. Place the banana halves cut-side down in the skillet. Cook 2–3 minutes until golden and caramelized on the bottom. Flip gently with a spatula and cook 1–2 minutes more on the other side. The natural sugars in the banana will brown beautifully.

Season:

While the bananas are hot in the skillet, drizzle with honey or maple syrup and sprinkle ½ tsp Vanilla Sel evenly over them. The salt's vanilla notes will melt slightly into the syrup, creating a sweet-savory glaze. Remove from heat.

Assemble:

Place toasted bread on plates. Top each slice with 1–2 caramelized banana halves. Drizzle any remaining skillet syrup over top.

Finish and Serve:

Sprinkle the remaining ½–1 tsp Vanilla Sel lightly over the assembled toast—this adds a final pop of vanilla aroma and subtle crunch. Add optional toppings like almonds or berries for texture. Serve warm immediately.
